ORANGE BASKETS 6 persons |
Ingredients:
3 Oranges halved crossways
50g 2oz cooked prawns ( save about 18 to decorate at the end )
225g.8oz cooked chicken/turkey finely chopped
110g Mushrooms finely sliced
110g 4oz cooked rice
1 tablespoon chopped crystalised or preserved ginger
Dressing
2 tablespoons orange juice
1 tablespoon wine vinegar
2 tablespoons olive oil
Salt, paprika, spriggs of parsley
Method
Take a thin slice from the base of each 1/2 orange to make it stand square.
Keep these slices for decoration.
Scoop out the flesh and pith, and press it through a seive to give you the
2 tablespoons of juice required in the dressing.
Blanch the sliced mushrooms in boiling water for 1 minute, then drain .
Mix all the ingredients for the dressing together, and marinate the mushroom
until cold .
Add all the other ingredients and mix well.
Pile into the orange shells, decorate with about 3 prawns eacg, some fine
slivers of orange rind and a small sprig of parsley.
