HALLOWEEN
CASSEROLE 6 persons |
900g / 2 lbs diced pork
Oil to fry
450g / 1lb pumpkin flesh cut into bite size pieces
1 Stick of celery finely cut
2 Onions finely cut
225g / ½ lb Dried apricots chopped.
110g / ¼ lb Dates chopped
110g / ¼ lb Raisins
1 Tablespoon honey
2 Eating apples peeled and chopped
Zest of one lemon
Zest and segment of 1 orange
25g / 1oz Flour
Herbs & Spices:
Bouquet Garni
3 Crushed garlic
1 Teaspoon mace or nutmeg
1 Teaspoon of black pepper
1 Teaspoon of curry powder
½ Teaspoon crushed fennel seeds
½ Bottle red wine
Salt
Fry the pork until golden and place in a casserole dish. Do the same thing
with the onions. Add the pumpkin. Sprinkle the flour over the mixture whilst
turning until evenly coated. Add the herbs, spices and fruit, finally the
honey and wine. Season to taste.
Cook in a low oven Gas 275f / 300c / gas mark 3-4 for 2½ - 3 hours.
Serve with rice or fluffy mashed potatoes.
