CREAM OF CORN SOUP 6 persons |
Ingredients:
¼ pints. 720 ml chicken stock
1 sliced onion
Fresh thyme, parsley and bayleaf
A good pinch grated nutmeg
1 teacup of tinned creamed corn
Salt and pepper
1 oz. 25g butter
1/2oz 10g plain flour
2-4 tablespoons cream
Tie herbs together and add to the liquid together with the onion. Bring to the boil, add nutmeg, creamed corn and seasoning. Cover and simmer for 10mins- remove herbs.
In a microwave, melt the butter and stir the flour into it. Stir this into the corn mix and cook for 15 minutes, add the cream and reheat but do not boil.
Garnish with a sprinkling of paprika.
