Well, since my love is Access, I'd want to do it in Access.  Using the reservation number, or another unique identifier, you could put all the basic info for the trip in this format.  Then if you have changes, you could pull up the reservation number and make changes or annotate them in a field such as "comments" but perhaps named "Changes".

I'm not really sure what you're trying to track, other than the fact that you've been making changes to these tickets and why.  This seems to be a straight forward way of tracking those, and an Access database could be searched and arranged by reservation number or by employee or location or whatever field you enter.

Can you give a bit more of an idea of what you'd want to do with this database, and we could probably give a bit more of a response.
