One of my favorites is Antoine's. It was a favorite of my in-laws while they lived in New Orleans. Several years ago there was a conference held in New Orleans, my (then) boss (the mayor) and many of the city councilmembers attended. I was given the pleasure of making arrangements for a group dinner. I chose Antoine's. We were given a private room and the best waiter (because they all new my father-in-law). I got high marks for the dinner. There are many less formal restaurants but this is a must for anyone visiting New Orleans. check out

And just a personal note, I've eaten at Emerils in New Orleans and the one in Las Vegas and am not all that impressed.
I hope that they will allow time in their schedule to hit a few of the wonderful jazz clubs/bars in the area.
Another must is Cafe DuMonde for the world famous beignets.
