Where I currently work, you order food for meeting via catering who have set menus. You tell them the number of people attending and they calculate what is required. So far, always seems too much is delivered but better that way I suppose.
In previous jobs, have had to order food from Marks and Spencer so had to judge what was required. Usually ended up with a little too much but that soon was eaten (usually by me). They told you how many rolls on each platter and you could see how many sausage rolls were in each packet so easy to work out according to how many people attending.
I believe most places tell you how many sandwiches/rolls are on a platter and from that, you could allow each person, say, 2 each and work from there. Used to get lots of nibbles, crisps, dips which seem to go along way. Hope this helps.
